Butternut Squash with Baked Apples

Preset the oven at 400 degrees. Cut an butternut squash down the middle - gut and deseed - and face cut sized down on a baking sheet sprayed with olive oil (or Pam if you MUST) - cut and dice the apples - put them in a separate pan.

Put both pans in the oven along with a oven safe measuring cup with 1/3 cup water in it (to moisturize while you cook) - and cook it all for 35-45 minutes - or when squash is tender. I like to mash the squash - but you could simply put the baked apples in the squash and serve it as is.

Cooked this way - you can never screw this up. It's quick - and easy. and in this case - ready to eat after a kateywalk and quick shower. Yay!3

well the baked apples make a nice compliment. I do it with no sugar or sweetener though cuz I am a'watchin' the figure.

I like to take an acorn squash and cut it into two halves. I remove the seeds and place the halves cut side up into a 2 cup soufflé.

I fill the cavity with:
  • Butter or margarine
  • Brown sugar
  • Maple syrup
  • Sugar-free syrup
and microwave it until tender.

You eat it with a fork, scraping the squash flesh down through the syrup and butter.

Dessert variant -

No squash (duh!) just core the apples and fill with rehydrated raisins (soak in water, white wine or rum) and chopped walnuts, a splash of cider or apple juice, cook as above. Sprinkle a pinch of brown or raw sugar on top about halfway through if desired. If you're tempted to splurge, whipped cream or vanilla ice cream are a yummy topping.

Youse guyz are forgetting the cinnamumummum! Get yourself some good Vietnamese cinnamon and use it, it's really good for your blood pressure. {And some ginger is good too}
