Continuing Dave and I's journey through the COOKING FOR TWO COOKBOOK from America's Test Kitchen, tonight was yet another winner.



Brined in a saltwater/brown sugar bath - then stuffed with baguette stuffing with pink lady apple, celery and fresh garlic and herbs - these babies are pan seared to give them a yummy crust then finished in the oven.

D is for delicious.

I served with them with world's easiest side - pan seared yams.

Again - ATK breaks the recipe down to portions that are manageable. The chicken was (and I don't say this lightly) cooked perfectly. I paired it with a scarlet quinoa salad with chunks of fresh tomato and cucumber in champagne vinegar and lime juice. I served it along with fresh plumicots from the farmers market.

This "Cooking for Two" challenge is proving to be some of the most fun I've had cooking in a while.

The cook book is the 'year's best recipes' from America's Test Kitchen rebuilt for cooking for just two people.

FULLY AWESOME!

WOWSERS what a yummy recipe!



Yellow Butter Potatoes, Spicy Italian Sausage, Collassal Shrimp and Corn on the Cobb - all that simmered in a delicious sauce of vegetable stock and cajun seasonings (which I saved to make Creole Rice with later) along with a fresh tomato salad.

The tomatoes were rolled in balsamic vinegar and olive oil - sprinkled with torn fresh basil, salt and pepper and were refridgerated. DELISH!

The only change I made to the recipe as printed; was replacing the 1 cup of water with 1 cup of Vegetable Stock...
