If you like bowties, try this:

Jeff’s Vegan “Cheesy” Bowties
Ingredients:
1 pound farfalle pasta, cooked
1 bunch spinach, rinsed,
drained, and chopped
2 medium tomatoes, chopped
1 medium red onion, diced
small
1/2 cup olive oil
4 cloves garlic, minced
1/3 cup balsamic vinegar
1 tsp salt
1/2 cup nutritional yeast
Directions: In a small bowl combine olive oil, garlic, balsamic vinegar, and salt.
Mix thoroughly.
Add the nutritional yeast and stir until it is dissolved and you have a creamy paste.
Add to pasta and stir to coat well.
Add vegetables and mix again.

I second the thanks for the link. It brought back lots of childhood memories of all of the varieties of pasta my grandmother made. I wish they all came as gluten free.

Many, many years ago, a pasta company sold their type of rotelle as "wagonwheels". I pestered my mother for weeks to buy those things.

I like to serve them covered in chili.

I'm not sure what your local Whole Foods Market might have.

One thought would be to pick up a pasta maker and try your hand at it. I located a recipe for gluten-free pasta.

Pasta machines are easy to find. There are two kinds. One variety - a press - makes ribbon pastas. The other type - an extruder - makes pasta tubes.

Pulllease - I'm Italian, doesn't everyone have a pasta machine??? Actually, I almost got rid of it in the move because of the gluten issue, but now - Thanks for the recipe, I'm going to have to try it.

Err... Don't ask. I had attempted to pre-brown the meat but my electric stove isn't hot enough and mainly ended up pre-cooking it instead. After sitting in the crock pot all day, the meat was terribly overcooked and dried out. Live and learn.

But adding steamed green peppers a la your suggestion helped!
