Butternut Squash with Baked Apples

Preset the oven at 400 degrees. Cut an butternut squash down the middle - gut and deseed - and face cut sized down on a baking sheet sprayed with olive oil (or Pam if you MUST) - cut and dice the apples - put them in a separate pan.

Put both pans in the oven along with a oven safe measuring cup with 1/3 cup water in it (to moisturize while you cook) - and cook it all for 35-45 minutes - or when squash is tender. I like to mash the squash - but you could simply put the baked apples in the squash and serve it as is.

Cooked this way - you can never screw this up. It's quick - and easy. and in this case - ready to eat after a kateywalk and quick shower. Yay!³
