Taco Salad Extreme!

1 lb extra lean turkey
2 tbspns cumin
2 tbspns garlic
2 tbspns oregano
2 tbspns red pepper flake (the extreme part, it makes it ohsospicy!)
2 tbspns chili pepper
3/4 cup water
1 tbspn potato starch
(minced onion unless you are coking for David - then it's "ugh!OH Thats gross! Disgusting!" - so no onion)
1 red bell pepper washed and cored, sliced
1 yellow bell pepper washed and cored, sliced
1 orange bell pepper washed and cored, sliced
2 organic beefsteak tomato cored and cut into bit size pieces
lowfat sour cream
and shredded pepper jack/sharp cheddar
butter lettuce (we used prebagged, but its up to you)

Its honestly - as easy as cook up the meat, as it browns add the spices one by one - coating the meat as you go - then add 3/4 cup water and the starch. then assemble the salad lettuce first, then meat - then peppers and tomatoes and garnish with cheese and sourcream. The starch has to be carefully measured - our dinner tonight you could taste the starch a little because I eyeballed it rather than carefully measuring. but - it turned out really good - and if you use fat free cheese and sourcream - it's also not too bad for you. (oh and don't eat the whole bag of tortilla chips while MAKING the salad, leave a few to put around the sides)

David says "The picture looks 'just like a meal' - but in person - the presentation is much more impressive." What a guy!?

...sounds healthy as well. Any idea how many points?

that depends on the scoop of meat you put on it - I just added a picture zoomed out of the portions. David's closer to the camera - and mine farther away. I'm sure the sourcream quickly adds points.

That looks yummy! However, since I don't like bell peppers or sour cream, what would you suggest substituting?

HUGS!
