Ingredients
1 cup macadamia nuts
1/2 cup grated parmesan
1 bag of dried pineapple from the grocery
1 quart buttermilk
4 defrosted boneless chicken breast
1/2 pound string beans
1/2 pound yellow corn
1 walla walla sweet onion
olive oil
kosher salt and fresh cracked pepper
Defrost your four chicken breast and then leave them for the day while you are at work - or whatever you do to be fabulous - soaking in a tupperware filled with a quart of buttermilk. (8 hours+)
Get home from your day of fabulousness, and preheat the oven to 350.
Crush macadamia nuts to bread crumb consistency in food processor, add dried pineapple and pulse till it little bits, add parmesan and pulse a couple of times to properly mix everything up. Take the chicken out of the fridge and roll each chicken breast in the parmesan/macadamia/pineapple mixture. Place on a baking sheet. Put in the oven for 30-45 minutes.
Cook until golden brown.
Then tonight I made a succotash style vegetable in sauce to go over the chicken. I pan fried string beans and corn with olive oil, a tablespoon or so of ground coriander, pepper and salt in a very hot pan turning and cooking till the corn started to brown, then I added a 1/3 cup pineapple puree (canned pineapple drained and dried and then food processed into a puree). Then I fried an entire walla walla sweet onion up in another pan. I separated each of the layers so they made a nice big piece of onion. I cooked it and fried it up until the onion started browning and combined it all together and put over the chicken breast.
