Pizza!

I made a fresh tomato mushroom pizza tonight - with strips of leftover parmesan encrusted pork loin. I wasn't happy with my crust - it ended up absorbing the tomatoes instead of crisping up. So the first couple of slices were crispy - but it soon was not. David was quick to point out that the flavor combos were wonderful and that it tasted great despite it's not quite coming together as pizza. It's my first go at homemade pizza in years and years.... so we were happy with the tasty pizza-like dinner we had. but - it's all about learning to do it differently/better another time right?

OMG that looks GOOD!!!!!!!!! I have been avoiding Pizza while on my diet, but I think a slice of that would satisfy my cravings for a while!!!

It's is learning to do it differently/better another time. You're not on an episode of Top Chef, so I hope you're not beating yourself up over it.

I bake the crust for about 15 minutes, then take it out of the oven and put all the toppings on it. You have to stab the crust multiple times with a fork first or it will bubble up.
