I actually love brussel sprouts.

[identity profile] low-fat-muffin.livejournal.com 2009-01-08 02:47 am (UTC)(link)
they are one of my most favorite quick winter side dishes.

He recently posted about his love of brussels - and I just wanted to share in the love:

[identity profile] low-fat-muffin.livejournal.com 2009-01-08 04:04 am (UTC)(link)
serious good eating!

rolled in sea salt, garlic and olive oil and baked at 400 for 35 minutes - then sprinkled with grated asiago.

WOW!3

You know I've defriended people for less than this, muffinman . .

Aaaaargh!

Brussel Sprouts are pretty much the ONLY vegetable that I detest eating - but you've actually made them look quite delicious.... You can turn me yet, Robert!

Funnily enough, Roy hates them too!

And if I should happen to mention that I don't like peas?

[identity profile] low-fat-muffin.livejournal.com 2009-01-08 04:05 am (UTC)(link)
what did the pea ever do to you!?

You know, I'm thinking that brussel sprouts would go just fine with some smoked sausage, cut into similarly-sized pieces. Maybe, even with a little sautéed sweet yellow onion.

[identity profile] low-fat-muffin.livejournal.com 2009-01-08 04:05 am (UTC)(link)
actually that would be quite good. :) with a sprinkle of sweet corn.

[identity profile] bembacolora.livejournal.com 2009-01-08 04:05 am (UTC)(link)
That's exactly what I had tonight too!

[identity profile] bembacolora.livejournal.com 2009-01-08 04:12 am (UTC)(link)
Prepared exactly the way you did except I used grated Parmesan (Asiago sounds better) and tonight I added bacon.

I LOVE roasted brussel sprouts! It's the only way I will eat them. Now I am going to conquer another veggie I do not like by roasting it, cauliflower! :P

Roast Cauliflower Indian Style

[identity profile] stivalineri.livejournal.com 2009-01-08 05:57 pm (UTC)(link)
I roast cut up cauliflower with turmeric, cumin, ginger and a cinnamon and black pepper along with chopped up onion and some poblano or red peppers. When you take it out, sprinkle with chopped cilantro. It roasts really nice and gets crispy in parts if you cut it up into small 1/2" chunks. You roast it at 400° for 45 minutes or half an hour if you have a convection oven.

I can make a meal out of just a cauliflower made this way, and the spices are really good for you. Roasting cabbage family vegetables also cuts way down on the gassiness.
