Brussel Sprouts are pretty much the ONLY vegetable that I detest eating - but you've actually made them look quite delicious.... You can turn me yet, Robert!
You know, I'm thinking that brussel sprouts would go just fine with some smoked sausage, cut into similarly-sized pieces. Maybe, even with a little sautéed sweet yellow onion.
I LOVE roasted brussel sprouts! It's the only way I will eat them. Now I am going to conquer another veggie I do not like by roasting it, cauliflower! :P
I roast cut up cauliflower with turmeric, cumin, ginger and a cinnamon and black pepper along with chopped up onion and some poblano or red peppers. When you take it out, sprinkle with chopped cilantro. It roasts really nice and gets crispy in parts if you cut it up into small 1/2" chunks. You roast it at 400° for 45 minutes or half an hour if you have a convection oven.
I can make a meal out of just a cauliflower made this way, and the spices are really good for you. Roasting cabbage family vegetables also cuts way down on the gassiness.

rolled in sea salt, garlic and olive oil and baked at 400 for 35 minutes - then sprinkled with grated asiago.
