Fruity Walnut Goat Cheese Salad
Dec. 7th, 2008 10:35 pmTonight was book club night - and we were asked to bring salad. I did a hearts of romaine salad with chunks of persmimmon, fuji apple, blackberry and craisins. I added a sprinkle of crumbled goat cheese and fresh walnuts. It was VERY good; I was worried about the lack of dressing. Since Weight Watchers I rarely if ever put dressing on a salad any more - but my worries were for nothing. It was a good recipe!
Persimmons are another fruit I've recently been learning about. They are delicious simply eaten as is - but were perfect in tonight's salad. This was the last of my box of fruit and vegetables - with a new one coming Wednesday. So - between the bokchoy, persimmons and leeks - - I've learned about three new winter foods. I'm having a great time with all this.
